Ingredients:
- 1/3 cup oil of choice
- 1/3 tsp asafoetida (heeng)

- 1 tsp ground cumin (jeera powder)
- 1/2 tsp ground ginger (sonth powder)
- 1/2 tbsp Kashmiri chili powder
- 1 and 1/4 tsp salt
- 1 and 3/4 cups water (divided)
- 1 cup dried black beans (soaked or unsoaked)
Instructions:
- Rinse and soak the beans overnight in water, then drain and rinse before cooking.
- Set the Instant Pot to sauté mode, add oil, asafoetida, and bay leaf.
- Add spices, salt, and water, then stir.
- Add black beans and more water. Cook on manual/high pressure, then let pressure release naturally.
